-- As I prepared our tea, the Yogi began to speak... "Many years ago zen master Ryokan and I were walking on the beach. A tremendous storm had just blown over and the brilliant hot sun emerged to warm the sands. Hundreds of golden starfish had been washed up by the waves and they were beginning to die in the sharp sunlight. Ryokan paused and picked up a starfish and returned it to the sea. Then another, and another.

I asked the master, “Why do you do this? Every time there’s a storm, this happens to the starfish. You cannot save them all, so what difference does your attempt make?”

"It will make a difference – to this one... and this one... and this one," replied Ryokan, as he returned yet more starfish to the sea.

"It matters not our impact. Likewise, it matters not our perception of the degree of change we can have in this world," he continued. "It matters that we try. For if we try, we change the world." --

Ayurveda is life: 

The basic principles of Ayurveda can be found in its name, which in Sanskrit means "longevity" (ayus) and science (veda). Overall, balance within the body is emphasized through moderation of such things as sleep, sexual activity, medicine and last but not least, food. The last, food is an important feature in Ayurvedic practice and as such, all herbs and plants are purported to have various uses and characters.

HOT BREWING METHOD:
Bring filtered or freshly drawn cold water to a rolling boil. Place 1 slightly heaping teaspoon of loose tea for each 7-9oz / 200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea).
ICED TEA BREWING METHOD (Pitcher): (To Make 1 Liter/Quart):
Place 12 slightly heaping teaspoons of herbal tea or 6 tea bags into a teapot or heat resistant pitcher. Using filtered or freshly drawn cold water, boil and pour 1¼ cups/315ml over the herbal tea. Steep for 5-10 minutes. Quarter fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the tea or removing the tea bags. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste. A rule of thumb when preparing fresh brewed iced herb & fruit tea is to increase the strength of hot brew since it will be poured over ice and diluted with cold water.
